All-purpose flour450 g

Baking soda1 tsp

Fine salt1 tsp

Buttermilk350 ml

Flour, for tray1 tbsp

Mix dryMix flour, baking soda and salt in a large bowl.

Add buttermilkPour in buttermilk and stir just until a shaggy dough forms.

ShapeTip onto the floured tray. Gently form a 20 cm round and cut a deep cross in the top.

BakeBake 35–45 minutes until deeply golden and hollow-sounding underneath. Cool on a rack for 30 minutes before slicing.
